Banana Bread:
3 ripe bananas (the riper, the better)
113 grams melted butter or ½ a cup oil
150 grams of sugar (white, brown, or a mix)
2 eggs
1 teaspoon vanilla extract
188 grams of Plain flour
1 teaspoon baking Powder
½ teaspoon salt
Optional: ½ teaspoon cinnamon, ½ cup chopped nuts, or chocolate chips
Method:
Preheat your oven to 350°F (175°C) or 180°C Fan Grease or line your Loaf Tin.
In a large bowl, mash 3 ripe bananas until smooth.
Stir in the 113 grams melted butter or ½ a cup oil.
Add 150 grams of sugar, 2 eggs, and 1 teaspoon vanilla extract. Mix well.
Sprinkle in 188 grams of Plain flour, 1 teaspoon baking powder, ½ teaspoon salt (and ½ teaspoon cinnamon if using). Mix just until combined—Don’t overmix!
Fold in any extras—chocolate chips, nuts, go wild.
Pour the batter into your tin. Smooth the top.
