
Classic Christmas Pudding
Ingredients for a Christmas Pudding
200g (7oz) raisins
200g (7oz) sultanas
100g (3.5oz) chopped mixed peel
50g (1.7oz) chopped nuts (optional)
150g (5.5oz) soft brown sugar
100g (3.5oz) suet or butter
2 eggs
100g (3.5oz) plain flour
1 tsp mixed spice
100ml (3.5 fl oz) brandy or stout
Steps:
Mix all dried fruits, nuts, sugar, and suet/butter in a large bowl.
Beat eggs, add flour, spice, and brandy. Combine with fruit mixture.
Spoon into a greased pudding basin, cover with parchment and foil.
Steam for 4–5 hours.
Optional: store for a few days to let flavours mature. Warning: aroma may tempt a sneaky taste of batter.
