
Chocolate Mousse
Ingredients for Chocolate Mousse:
200g (7oz) dark chocolate
3 large eggs, separated
50g (1.7oz) caster sugar
300ml (10.5 fl oz) double cream
1 tsp vanilla extract
Steps:
Melt chocolate gently over a bain-marie (a saucepan with water in it). Cool slightly.
Whisk egg whites to soft peaks, gradually add sugar until glossy.
Whip cream until soft peaks form. Fold in cooled chocolate, then gently fold in egg whites.
Spoon into serving glasses, chill 2–3 hours. Optional: decorate with grated chocolate or berries. Warning: tasting while chilling is practically mandatory.
