
Berry Cobbler
Ingredients:
400g (14oz) mixed berries (fresh or frozen)
50g (1.7oz) caster sugar
1 tbsp cornflour
125g (4.4oz) self-raising flour
75g (2.6oz) unsalted butter, diced
75ml (2.6 fl oz) milk
50g (1.7oz) caster sugar for topping
Steps:
1. Preheat oven 180°C Fan / 200°C Electric / Gas mark 6. Grease a baking dish
2. Toss berries with caster sugar and cornflour, place in a greased baking dish.
3. Rub butter into flour, mix with milk to make a soft dough.
4. Drop a spoonful of dough all over berries, sprinkle with sugar. Bake 25–30 mins until golden and bubbling. Optional: serve with cream or ice cream. Warning: may disappear faster than you think.
